Boric acid H3BO3 is a weak acid and is an uncharged small molecule at physiological pH. It behaves as a Lewis acid and forms complexes with amino and hydroxy acids, carbohydrates, nucleotides, and vitamins through electron donor-acceptor interactions. These interactions are believed to be beneficial to human health. Boric acid and other borates have been increasingly used as a source of boron in food additives. In most commercial boron supplements available today, boron is chelated with amino acids or polyhydroxy acids along with vitamins.
The invention provides a method for measuring the boric acid content of foods. The method includes the following steps: first, extracting the boric acid and borate in the food to form a solution of boric acid and borate; second, the solution of boric acid and borate is concentrated online; third, the concentrated boric acid and borate solution is introduced into an ion separation chromatography column to separate the boric acid from the borate; and fourth, the separated boric acid and borate solution is transported to the inductively coupled plasma optical spectrometer to measure the boric acid concentration in the food.
